MEAT- PROCESSING AND PACKING PLANT: HOW WE DO IT?

Ozonation systems for meat-processing and packing plants are divided into three types: a system for ozone supplying directly to the atmosphere of the room to be treated, a system for ozone treatment of water and systems for waste water treatment and reuse.

Systems of the first type are used in refrigerators, defrosting chambers, raw meat packing departments, drying cabinets, raw departments. The main objective of ozonation is to increase safety and shelf life of products and reduce the level of contamination of production premises with fungi, bacteria and viruses.

Systems of the second type are used to prepare water acting as a strong, environmentally friendly disinfectant. The ozonated water is used for disinfection of equipment and product treatment; it may be supplied in the form of mist or liquid.

Systems of the third type are used for treatment of waste water from fats, carbohydrates and other impurities after meat and equipment bathing before being discharged into sewerage. At integrated treatment system the purified water can be reused in the production cycle.

All ozonation systems can be mounted on a separate frame or wall anywhere at meat-processing and packing plant. Ozonation system for ozone supplying into premise atmosphere consists of dryer, compressor, ozone generator, control unit with timer, collector with flow meter and pipeline distribution network. An air is used for ozone generation, which is prepared by dryer and supplied to ozone generator by compressor. Ozone is generated from the dried air by ozone generator and supplied to collector. The collector distributes the ozone among treated premises. Ozone from the collector enters the special ozone-resistant pipeline network. The pipe is mounted at ceiling level and has holes of different diameters for uniform gas feeding.

Ozone water treatment system comprises ozone generator, air dryer, compressor, pump, reaction tank and intersection tank. Air from the atmosphere is supplied through the dryer to the ozone generator using compressor. The generated ozone is supplied to the reaction tank, where it is mixed with water and then the ozonated water is supplied to the intersection tank. The water from the intersection tank is taken for disinfection.

Waste water treatment system comprises ozone generator, air dryer, compressor, pump, several reaction tanks and intersection tanks, fat catchers, flotators and other additional filters. The contaminated water enters the filter system for collecting fats and large-size suspensions. Air from atmosphere is supplied then through the dryer to the ozone generator using compressor. The generated ozone is supplied to the flotator and the reaction tank, where the water is treated with ozone and then enters storage container for final treatment. This water can be reused in the production.
